This is the 2021 vintage of our SAKEWINE "Blanc de Noir". Once again, Pinot Noir was used and vinified using the white wine method.

In 2021, yeast No. 7 was used. This yeast is also known as "Masumi yeast" and produces citrus notes reminiscent of grapefruit and lemon.

As a result, the fruit of the Pinot Noir and the fresh, fruity aroma of Japanese sake yeast combine to create a unique style that clearly differs from conventional Blanc de Noir.

Even in laboratory analysis, it was rated as "a new type of wine that differs from the usual characteristics of Pinot Noir" – a wine with unmistakable character.
